In the past, pumpkin pie was very different to how it is today! A 1653 French version of it instructed cooks to boil pumpkins in milk and strain it, and an early New England recipe involved filling a hollowed pumpkin with milk that was spiced and sweetened. The pumpkin would then be cooked directly over a fire! A closer version of the recipe we know and love today was first created by Amelia Simmons’ cookbook American Cookery in 1796.
